Stuffed Peppers
1 lb. lean ground beef
1 small onion, peeled and chopped
Dash of salt
Dash of sugar
1 16-oz. canned whole tomatoes
6 to 8 whole large bell peppers, seeded and veined
1 cup rice, uncooked
1 cup cheddar cheese, grated

Core and wash peppers, then place in a pan of boiling water for about 5 minutes.

Brown ground beef and chopped onion. Add tomatoes with juice, salt and sugar. Simmer 5 to 10 minutes. Add dry rice and cook until rice is done, about 10 minutes. (You may need to add a little water with rice.) Add grated cheese; stir until melted. Fill each pepper and bake at 350 degrees about 20 minutes.
