Breakfast Pan Burrito
1 pkg. taco seasoning mix
1 can tomatoes and chilies
1 can tomato soup
1 garlic clove, minced
Salt and pepper to taste
1 lb. sausage
6 to 8 eggs
2 cup sharp cheddar cheese, shredded
Large flour tortillas (approx. 4 - 5)
Salsa, sour cream, green onions, chives, black olives

In saucepan, combine first five ingredients; simmer for 15 to 20 minutes.

In large skillet, brown sausage and drain on paper towels. Scramble eggs.

Stir 1/3 of sauce into sausage. Spray pan or casserole dish with cooking oil. Spread 1/3 of sauce into bottom of pan or casserole dish. Cover sauce with tortilla shells, tearing to fit bottom of pan. Spoon half of sausage mixture over tortillas; sprinkle with 3/4 cup cheese. Cover with more tortillas; spread scrambled eggs evenly over top; top with remaining sausage mixture and sprinkle another 3/4 cup of cheese over top.

Add another layer of tortillas and top with remaining sauce. Sprinkle remaining cheese over top. Bake, uncovered, at 350 degrees for 35-40 minutes. Let stand 10 minutes. Before serving, top with salsa, sour cream, onions, chives, black olives or other condiments of your choice.
